Chia Seed Pudding Recipe

I can’t believe it’s taken me this long to discover chia seed puddings.

These little gel-like seeds are amazingly nutritious and so easy to prepare. You buy them as tiny, black seeds, and when soaked in liquid they absorb up to 12 times their weight!

They really do help keep you full, and are packed with essential omega-3 fatty acids, antioxidants, protein and fiber. They’re also low in cholesterol. It’s a win.

And a dessert that you don’t have to feel guilty for!

Ingredients

(for 2-3 servings):

1/2 cup chia seeds
2 cups coconut milk
1 tablespoon maple syrup/agave nectar
1 teaspoon cinnamon
Fruit for toppings (anything from pomegranate, mango, strawberries, blueberries, banana, passion fruit.. whatever takes your fancy)

Method

Put the chia seeds, coconut milk, cinnamon and maple syrup in a big bowl, and mix it all up well with a spoon. Make sure the seeds are mixed in/coated completely with the liquid.

Leave the bowl in the fridge for at least 4 hours or over night if you’re well organised :).

When you rush to your fridge the next morning you’ll see the chia seeds have absorbed all the liquid making the perfect gel-like base for a delicious pudding.

Scoop it in to a suitable glass/jar and top with whatever you desire, adding an extra drizzle of maple syrup if you prefer it sweeter.

You can have fun with the toppings, making it look tasty and pretty too.
